The day that I can make a dish from my childhood come to live again is always a happy day. This beet salad is an authentic Russian dish, called “vinegret.” My mother always spent hours preparing it and that fact alone made me avoid it like a plague, until I figured out a way to cook it quickly.
This salad is exceptionally healthy. Beets are a great source of minerals, mainly sodium, calcium, phosphorous, iron and magnesium. Beets are rich in folic acid and dietary fiber. Beets also contain niacin, Vitamin C as well as Vitamin A. Made with cooked root vegetables, the beet salad has a perfect balance of sweet and salty.
