
Bebinca, also known as bibik, is a traditional Goan dessert. The ingredients include plain flour, sugar, ghee (clarified butter) and coconut milk. The dessert is baked in a specially-made clay oven, with hot coal as a source of heat, placed above. It has to be baked in layers and traditionally has 16 layers. The dessert is very common in Goan cuisine.
Bebinca - A layered coconut milk based dessert
Serves- 4
Time required -45 minutes
You will need
½ coconut , grated
40 ml water
4 egg yolks
160 g sugar, powdered
40 g flour
20 g sugar for caramel
Salt to taste
A pinch f nutmeg powder
Clarified butter
Method
Grind the grated coconut with enough water and extract coconut milk. Beat the egg yolks with powdered sugar till light and fluffy. To the coconut milk, add the remaining water, flour, caramel , salt and nutmeg powder. Mix well and keep the batter aside.
Put one teaspoon clarified butter in a small pan and keep the pan in a pre heated oven for some time. Pour about 60 ml of the prepared batter into the pan and bake until the layer is quite brown. Remove the pan from the oven, add about half teaspoon clarified butter and 40 ml batter and return the pan to the oven till the top layer is well baked and brown. Continue putting the layers in the same way with the remaining ingredients, finishing off with a well browned batter layer.
