Banana Oats and Healthy Baking!

Hello Everyone! Firstly, I just want to say thank you all so much for visiting my blog! I got such great responses to my posts:)

Now on to my day…. This morning I wanted to try a different oatmeal. I love trying new kinds (Pumpkin, egg white) and then I SAW THIS and I knew immediately it was going to be a banana oats kind of day…

Perfectly over-ripe for some banana oat action!

I mashed half of the banana and put it in the microwave for a minute… then I added the oats and water… microwaved again for about 2 minutes and was ready to put on the good stuff!

1 fig, 1 tbsp Pure Apricot and Apple Preserves, cinnamon, 1tbsp flax, drizzle of agave and ALMOND butter! YUM to the max

…and yes I do just plop my flax on top.. I hate it when it gets dispersed all over the bowl…I love eating it in a big glop especially when it gets agave onto it.. its so chewy-I love the texture! I must admit…I had NEVER tried banana oats until today! and the verdict? LOVE ‘EM. I’ve had pumpkin and egg white oats, but the banana added such a sweet element to the oatmeal and I loved getting small chunks of banana in every bite!

I then headed off to class… fun? Mid- morning I felt my energy drop… I always get hungry around 10-10:30.. I don’t see how people can go from 7-12 with no snacks! I ate one of these babies:

Let’s step back a little

Its Low Carb Sweet Bread from April ! I made a batch of this the other day… it was SUPER simple and easy to make. Here’s what went into the big ol’ mixing bowl…


  • 1 cup protein powder (I used Spiru-Tein Chocolate Chip Cookie Dough flavor)
  • 1 cup wheat-bran
  • 1/4-1/2 cup pure pumpkin (I used 1/2 cup of pureed apples)
  • 1 cup liquid egg substitute ( i just used egg whites)
  • 1/2 cup hot water
  • 1 tbsp each baking powder and cinnamon
  • 2 tsp pure stevia extract ( I don’t have this so I just put in some natural sweetener)


BY THE WAY the little white dots in the cake are little cookie dough pieces from the protein powder.. just in case you thought it was something else.. yuck! I only cooked mine for about 25 minutes because I love things when they are slightly under-baked.. so moist and doughy! I love all of April’s creations because she makes super healthy foods and gives all the nutritional stats too! I cut the loaf into 8 portions and individually wrapped each one so I could pop it in my school bag each morning! I really suggest making this.. it is so sweet and doughy and the wheat bran adds such a neat texture.. it tastes like real cake, but this one has SO many more healthy nutrients!

Later on after MORE class, I had some lunch. It was super boring and plain (as my lunches usually are.. Im always rushed in-between classes so my food never looks presentable) I made a big veggie salad (and yes, that 100% means there was some brussel sprout action in there!) with cottage cheese (what else?) and I threw in a laughing cow wedge because they are delish!

In the afternoon I went on a quick 25 minute run to release my stress from the day. It was going super well until NO JOKE IT STARTED RAINING… AGAIN! I know I said yesterday it was refreshing, but today it was just cold and I was soaked… oh well I figured I was already wet so turning back would be pointless.. I carried on and was glad I did. I came back to the gym and did an easy 10 minutes on the bike and then two sets of arm exercises with a dumbbell.

Now I’m off to eat some dinner (most likely involving veggies!) What can I say? I’m obsessed! And then of course I’ll end with something sweet (healthy of course!)
