Banana Cream Bonanza

Up again today for an early workout because I’ve got a lunch out and things to do this morning. I was so productive yesterday I decided it would be worth it to have my day wide open again. My mother in law and I are traveling uptown via lightrail to meet the husband for lunch at a cool place we’ve never been: Feast. The place is part club, part restaurant, part bar, so I hope the restaurant isn’t too dark. But the menu looks fantastic!! I never order paninis and am thinking about one of them for lunch today..

Workout

So back to this morning. I had another small piece of focaccia with PB & J before my workout -

All cardio workout today: 45 minutes ET followed by stretching.

Banana Bonanza

This inspiration for today’s oatmeal was Banana Cream Yogurt (Harris Teeter light store brand).

The husband and I discussed the method on the way back from the gym - we didn’t want cold muesli (and didn’t have time for it to soak more than 10-15 minutes, which we didn’t think was enough) so we settled on hot yogurt oatmeal with wheatberries.

Here’s the combo (serves 2)

  • 2/3 cup oats
  • 2/3 cup skim milk
  • 2/3 cup water
  • 1 smallish banana, sliced
  • Pinch salt
  • 1 container Banana Cream yogurt, tempered (heated slightly) in the microwave
  • Splash vanilla extract
  • 1/2 cup cooked wheatberries (or just use 1 full cup oats from the beginning)

Add first 5 ingredients (through salt) to a pot over medium heat and cook until liquid is mostly absorbed. Meanwhile, temper the yogurt by heating it slightly in the microwave (you might want to put it in a glass dish for this). When oats are done, stir in yogurt, vanilla and wheatberries. Add toppings as desired.

One problem: Despite heating the yogurt, it still wasn’t very hot, so if you like your oats steaming, I’d add the yogurt just a little earlier and let it warm through longer.

Topped with toasted almonds and a bit of PB. My bowl almost overflowed!

The husband used a Statue of Liberty one. It was funny to watch a grown man eat with such a tiny spoon since he usually uses the giant Pottery Barn ones, but he said he likes using tiny ones!
