Fall in Vancouver this year seems to be full of pleasant, crisp, sunny days, and that makes me even more excited for heading to the pumpkin patch, getting ready for Halloween, and doing all those fun fall activities. Of course, everyone is excited to get into their pumpkin baking, but I still have great apples on my apple tree! This recipe for baked apples is a nice, not-too-sweet dessert…or even breakfast. You can create so many flavourful combinations of ingredients to stuff these apples with. If you don’t have cranberries, use raisins, or chopped dates. Try vanilla instead of orange and ginger, or sweeten with coconut syrup or honey, instead of maple syrup. Have some fun!
