T his was the best tasting pizza I’ve had in a while even though there were a few minor discrepancies. First off, the almond cheese is not the greatest melting cheese on earth and that was really the major issue with the whole. The other was the taste, which wasn’t bad at all, but it resembled the frozen pizza crust as opposed to normal pizza crust. Then again, it was a heck of a lot better than Glutino pizza in my opinion. That pizza was so chewy I honestly felt as if I was chewing gum and I followed it correctly in cooking time. The reason behind the crust not being so elsaticy either was the lack of yeast which I didn’t have on hand but I would try a different variation next time, more along the ‘doughy’ format.
The pizza threw me back to the days when I bought Lean Cuisine pizzas, which were delicious! I loved the deep dish and never felt guilty about it what so ever. Every bite dipped in hot sauce was Manda in happy town, just as I was with this Spinach Mushroom Olive Cheese Pizza.
Glad I made three.
The ratios may need minor adjusting but otherwise the taste is fantastic. Tutti a tavola a mangiera bella pizza for Daring Baker's Challenge of October! I might, once I perfect the dough, attempt a calzone. Gosh I miss those. Oh and finally yes, they can be frozen. When I was ready for one, I took it out, loaded it up and popped it into a pre-heated oven at 350 degrees for 15 minutes.
Pizza Crust
1/2 cup rice flour
1/3 cup cornmeal
1/3 cup tapioca starch
1 tbsp baking powder
1 ½ tsp baking soda
Salt
2 tbsp non-dairy margarine
½ tbsp sugar
1 egg, beaten
½ cup water
Pre-heat the broiler.
Simply sift all the dry ingredients in a bowl and stir until well combined. Add the wet ingredients and stir until combined.
Ladle the batter, which should be a pancake like consistency, into a heavily sprayed 8” oven proof frying pan about ½ inch thick. Cook on the stove top until the top bubbles and starts to dry. Once dry, place under the broiler until the top gets just a light golden brown hue.
Remove from the oven and flip it over onto a plate.
Makes 3.
When ready to serve, remove from the freezer, add desired toppings then set into the oven or toaster oven for 3 to 5 minutes.
