I roasted some string beans to go along with the filet and I made sweet potato wedges. You might think sweet potato wedges, they don’t look orange or yellow. I was thinking the same exact thing. I picked some up at the produce store and it said on the front of the display, New Jersey Sweet Potatoes. I thought it was interesting that they weren’t orange. I wanted to try them.
Sweet potato wedges
I think they pretty much taste like any other type of sweet potatoes that I’ve had before in the past. I was curious about them though so I did some research. There are differences between sweet potatoes and yams. I believe that I have had yams before and never a real sweet potato. According to the Library of Congress , yams are starchy and drier than sweet potatoes. Sweet potatoes skin color can range from white to yellow, red, purple or brown. The flesh also ranges in color from white to yellow, orange, or orange-red. Sweet potato are classified as either firm or soft. When cooked, those in the firm category remain firm, while soft varieties become soft and moist. It is the soft varieties that are often labeled as yams in the United States.
As you can see, I had the yellow-dry fleshed sweet potato. I think I prefer the orange sweet potato because it is typically softer and that is what you think of when you think of a sweet potato. I just thought it was so interesting because I have never had the yellow sweet potato before. You can see on the chart above, the Jersey Yellow that I had for dinner last night. I just think it’s so interesting because I never really knew the difference before. Do you like sweet potatoes? Do you have a preference from sweet potatoes or yams?
