A Quick Easy Dinner Recipe: Whole Wheat Fettuccine with Brie and Tomatoes

Here’s a quick easy dinner recipe that requires only minimal cooking — just boiling pasta — and is ready in twenty minutes or less. I made it for dinner last week and everyone agreed that it’s a tasty creamy keeper! I used canned diced tomatoes but can’t wait to try it again with fresh when their in season.

Recipe for Whole Wheat Fettucini with Brie and Tomatoes

  • 1/2 to 3/4 pound Brie cheese
    (room temperature or softened for 30 or so seconds in microwave)
  • 4 large ripe tomatoes, diced (around 4 cups), or 2 15-ounce cans diced tomatoes
  • 1 cup fresh basil, torn or cut into strips
  • 2 to 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1 pound whole wheat fettuccini

Cook pasta according to the package directions until it’s al dente.

While the water is coming to a boil and the pasta is cooking prepare the ‘sauce.’ Remove the Brie rind and cut or tear the cheese into pieces and place in a large serving bowl. Add the tomatoes, basil, garlic, and oil to your serving bowl.

As soon as the pasta is done, drain and dump it into your serving bowl. Toss all ingredients together until the brie is melty. Serve immediately.

Serve with Suggesions: A simple mixed green salad like my favorite chopped romaine and dill , sauteed zucchini, or green beans to up your daily veggie quotient.
