A Peanut Butter Banana Bread Kind of Weekend…

Hi there!  I hope all of you are having a great weekend!  I needed a break from blogging yesterday so I gave myself one.  This weekend has gone by quite quickly!  I feel like I have so many things to get done today and the rest of the week.  I don’t know why I constantly put so much pressure on myself.  I’m having a really difficult time trying to figure out what to do for Mike for our anniversary.  I really don’t have a lot of money to spend.  I didn’t want to do anything extravagant because his birthday is also coming up around the corner.  I think I’m going to save a really nice gift for our wedding day which I pretty much already know what I am going to get him. I’m hoping that today Melissa can help me come up with something.  It’s hard to trying to figure out what to do since we’ve been together for so many years.  I feel like I’ve done so much already.  If you have any ideas, please share!  I could use all the help I can get!

So let’s catch you up to speed on my life.  On Friday when I got home from work, Mike was home because his work had off for Veteran’s Day.  It was nice to come home to him already being home.  We hung out for a while and decided we were both in the mood for Mexican food.  Who am I kidding?  I’m ALWAYS in the mood for Mexican!  I was surprised that he was though. I think I’m slowly converting him into a Mexican food fan.  We went to one of my favorite Mexican restaurants.  There was a pretty long wait.  Luckily, Mike ended up getting us a high-top table in the bar area.  So we didn’t have to wait as long!

We started our meal off with some beef nachos.

The ground beef was super tender!  I love when it tastes like that.  I am thinking about putting ground beef in the crockpot and slow-cooking it.  I think it might get the same effect.

I ordered my favorite chicken burrito from there but substituted mixed vegetables instead of the rice or beans, whichever it normally comes with.

I think I ate too many chips because by the time my meal came around I wasn’t that hungry anymore.  I ate some of it and packed the rest to go.  I cannot wait to enjoy it for lunch tomorrow at work!  I’m thinking that it should still be fresh.  I put it right in the refrigerator when we got home.

Once we got home, I set myself up in my favorite spot on our sofa complete with my snuggie and the space heater.  Mike had surprised me and bought us a case of one of my favorite beers, Paulaner.  So we caught up on the dvr and drank a Paulaner before calling it a night.

Saturday I woke up and was just feeling really sad.  I was sad because I had been planning for a month to attend the Savor Borgata event like I did last year.  Unfortunately, there were some issues and conflicts with communication and whatnot that prevented me from attending.  To say that I was disappointed was an understatement.  I was really looking forward to it.  I wasn’t in such a cheerful mood.  So I thought maybe enjoying my favorite pumpkin bagel with pumpkin cream cheese and pumpkin coffee would make me feel better.

It was good but I was still feeling down.  That was when I knew I needed to bake something.  That would make me happy!  So I spent the rest of the morning baking away in the kitchen.

On Friday, I noticed on Kim’s blog ( Eat, Live and Blog ), she posted an amazing recipe for Peanut Butter Banana Bread!  I knew I had all the ingredients at home and I had never made a loaf before so I put myself to work!

Peanut Butter Banana Bread (adapted from Kim’s recipe )


2 ripe bananas

1/2 cup all-purpose flour

1 cup white whole wheat flour

1/2 cup sugar

1/2 cup brown sugar

1/3 cup peanut butter

1/8 nutmeg (**I omitted nutmeg because I hate the smell and the taste)

3/4 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

2 eggs

3 T butter

1/3 cup of plain vanilla yogurt (**I used 0% vanilla Chobani greek yogurt)

Pecans (optional) (**I did not add any pecans)


Preheat the oven to 350.

Meanwhile, mix in the flour, baking soda, cinnamon, nutmeg, and salt in a mixing bowl.

In another bowl, mix the mashed banana, peanut butter, greek yogurt, and butter.

Then add the egg and sugar to the banana mixture until there are no more sugar lumps left.

Next, pour the banana mixture into the dry ingredients and fold together.

Fold in pecans and pour into a greased pan.

Bake for 50-55 minutes or until set. Let it cool for 20 minutes and then cut into it. Serve.

There is nothing like a slice of peanut butter banana bread

I have never made bread before so I had no clue how it was going to turn out.  I also had never used whole wheat flour before.  I have to say that this bread made my house smell heavenly!  It tasted even better!  Mike was out doing something his car and came in and smelled the house and was like mmm..can I have a piece of that?!  We didn’t even wait long enough until we dug in.  It was warm and had a wonderful banana flavor.  It came out really moist.  My only gripe was that I didn’t really taste the peanut butter.  That was okay though because I loved the banana flavor!  I have a feeling this isn’t going to my last time baking bread! It was super easy.  Thanks for the great recipe, Kim!  :)  Have you ever made bread before?  What is your favorite type of bread?

After hanging out in my pj’s the entire day, I decided it was probably time for me to get dressed.  We decided to walk around the mall.  I found 2 really cute dresses at Express.  I have some coupons and a store credit so I’m planning on going back today to check it out and more importantly, try them on.  They look cute on the hanger but who knows how it will look on me.

Once we were done browsing the mall, we came home and decided to have a Bertolli Meal Soup for dinner.

So yummy!  After dinner, we went over to Melissa and my mom’s house and hung out there for a little while.  Then Melissa, Mike and I went to Chickie’s and Petes for some drinks.  I like going there now.  I’m not even sure why.  I just do.  :)  It was good spending time with Melissa and Mike together.  I had fun.

This morning I made myself an egg and cheese omelette and put it on a breakfast thin.

It was quite a delicious breakfast.  Now I’m just planning out things that I need to pick up from the supermarket.  Can you believe that next week is Thanksgiving already?!  How is everything going by so quickly?  I don’t get it!  Alright, well I need to get the show on the road so I can start my day!  Have a good rest of the weekend!  :)
