Hello dairy free mousse…
Dairy free mousse, like dairy free cheesecake, just seems implausible. It really doesn’t sound like it could ever work, but somehow it really does! Tofu is seriously magical in its ability to replicate cream-type ingredients. You can’t taste it in the slightest, as it fully absorbs every other flavour. Each mouthful is perfectly balanced between the delicious sweet strawberries and raw agave syrup, and the slightly sharper raspberries and blackberries, with hints of cinnamon echoing between. So delicious.
Even better, this dessert is so ridiculously simply. 6 ingredients, 3 minutes: a heavenly bowl of smooth, berry-rich deliciousness! Every ingredient is available in the super market, nothing complicated here, which makes it a perfect sweet treat.
It makes an incredibly light, skinny dessert if you’re after something sweet to sate your cravings but don’t want an entire cake! If you’re feeling indulgent though, which being a serious sweet tooth I almost always am, serve these with my raw brownies. They combine so perfectly well together: the sweet, smooth berry cream against the rich, gooey chocolatey-ness. It is divine, trust me!
I know everything I make is healthy, but this really takes healthy desserts to the next level. It’s just blended vitamin-rich berries with protein-bursting tofu and blood sugar balancing cinnamon. Not one drop of nastiness here. It’s incredible. A perfect replacement to all the brought, sugar filled alternatives.
Top tip – do not put these in the freezer! Last time I made them I wondered what would happen if I did and it slightly ruined them as the creamy mousse turned into an icy block! My guests very politely ate them by gradually scaling at the top of their berry delight! Trust me it tastes so much better if you’re patient and leave them in the fridge!
- 1 block of tofu
- 1 bowl of strawberries
- 1 bowl of raspberries
- 1/2 a bowl of blackberries
- 3 dessert spoons of raw agave syrup
- a pinch of cinnamon
Simply chop off the green end of the strawberries before putting all of the ingredients together into the food processor. Blend for 3 minutes or so until the mixture is totally smooth.
Pour into little bowls and refrigerate for 3-4 hours.
