2 Minute Pumpkin Cake, Vegan and Gluten-Free

I used freshly made pumpkin puree, but store-bought is fine, too.

2 Minute Pumpkin Cake, Vegan and Gluten-Free

(makes one large mug, full of cake)

Ingredients:

7 Tbsp. almond flour

1/4 tsp baking powder

1/4 tsp. cinnamon

pinch nutmeg

pinch ground cloves

1 tsp. ground flax seed

1/8 tsp. sea salt

1/4 cup pumpkin puree

3 tbsp  maple syrup

2 Tbsp. coconut oil or butter (not vegan)

3 Tbsp. non-dairy milk ( I used  almond)

1/4 tsp. vanilla extract

 

Directions:

In a large mug, combine all the dry ingredients. Add pumpkin puree, maple syrup, oil , milk,  vanilla and mix well. Microwave for 1 minute 30 second. Some microwaves will need an extra 20 seconds.
