Hello. I am going to participate in What I Ate Wednesday this week. So this is what I ate yesterday. Thank you to Peas and Crayons for WIAW. This is everything I ate. Ready. Set. Go. Plus a little extra context : )
5:00 am – Alarm off. Foam rolled and stretched.
5:30 am – Met running group for a run. Considered one loop around the lake but feel *okay* so I did 7 miles. No watch because I wanted to run by feel and I know myself well enough to know that when I wear a watch I care way to much about my pace. Plus I know my route so well that I know where every single mile mark occurs. I felt okay the entire time I was running. No hip pain. But the rest of the day I was EXTREMELY heavy legged. And sore. But from my experience, when my legs feel sore after an injury scare (as long as it is a general all over soreness) it means I am recovering and the soreness is from the foam rolling and getting the junk out. So I might be on the mend. As long as I don’t push it. I followed the run with more foam rolling, icing, and stretching.
8:00 am – Breakfast. This was an interesting creation. I call it bulgur breakfast. So the night before I took one cup of left over Bulgar (cooked a couple of nights ago) and soaked it in 1/2 cup unsweetened soy milk. Then in the morning I microwaved it for 2 mins. I added 1/2 cup nonfat greek yogurt, a tablespoon of Raw Protein, and a tablespoon of peanut butter. I microwaved it for 2 more minutes. It was excellent and enjoyed with coffee!
Do the job search thing for a couple of hours. Yah know. The usual.
10:30 morning snack enjoyed outside reading an excellent book. It is The Language of Baklava . Go read it. It is good. I ate an apple with 1/2 cup nonfat greek yogurt (hmmm loving the yogurt yesterday and nut butters yesterday!) and 1 tablespoon almond butter. Plus TEA!
More job stuff.
12:30. Lunch while reading my book again. Lunch was left over baked tofu (baked a couple of nights about in the oven at 350 degrees for like 30 mins? I just brush olive oil on a cookie sheet and bake it) on an Ezekiel Pocket Bread with avocado smooshed on it. Plus huge carrots, some red pepper and green beans.
More job applying stuff. I ate a unpictured grapefruit and bite of unsweetened 100% chocolate. More tea and water.
4:30 snack in the park while waiting to meet people for happy hour for an honors society I’m a member of. I ate some hummus, Kashi crackers, banana, and a couple hunks of mozzarella cheese.
7:30 dinner. Okay I’ll try to remember what this mess was. 1/2 cup whole wheat pasta, 1/4 cup low-fat cottage cheese, 1/4 cup canned pumpkin, 1/4 cup tomato sauce, asparagus, kale, spinach. All heated up in a pan on the stove for a bit. Cottage cheese added at the end. Plus roasted broccoli (brush olive oil on a cook sheet and throw in the oven at 400 degree for about 15 mins) and skim milk.
9:00 bed time (I read for a while but go to bed EARLY) snack. Sorry no pic but easy to picture : ) 1/2 cup plain nonfat yogurt and 1 tablespoon of peanut butter.
