Yeah! Nothing is as exciting as summer. Long lazy days, vacations, ice cream.. hanging out late in the evening and it is still light out side... My favorite thing about this season is the variety of fresh crisp vegetables. RIght about now alot of things at the grocery store get nastier by the day.. apples are a good example. It has almost been a year since apple season and you can tell. The farmer’s market here opened back up on mother’s day and that is a sign of good things to come! Salads are a fun easy way to make your meal time nutritious and delicious. Here are some great tips starting from the ground upgreens: there are so many varieties out there now, spinach, baby spinach, cabbage, arugula, romaine.. no need for mindless iceberg! herbs: cut them up and add to the greens.. basil, dill, thyme.. rosemary Vegetables: Try to mix it up weekly, add something new to your basket when shopping. a good foundation is tomato, celery, carrot, bell peppers, avocado, scallions. However why not try something funky as well, like broccolirab, or purple cauliflower? You will never know till you try! I also tend to keep a container of roasted veggies in the fridge for quick healthy options to bring to work and a scoop of that adds a new twist to my salad as well as it will be egglant, broccoli.. things I don’t normally like raw. Legumes: Always keep a variety of canned beans on hand.. great source of fiber and protein. I love to add to salads, cannelini beans, black beans, chick peas... Canned fish: Tuna or salmon..straight from a can make for a quick source of easy protein and get you away from the typical sliced meats of a chef salad. EGGS: have a bunch already hard boiled at the beginning of the week as another quick source of protein Nuts and seeds: mix together, toast, chop, sliver etc. They add a whole other element to salad! cheese: Feta or goat cheese are my go tos... what are yours? dressing: I prefer to make my own with Evoo and Balsamic , red or rice vinegar. Sprinkle the herbs, salt and pepper.. delish!! However there are many healthy variation at the store these days to live it up! Fruit!: this adds a fun twist to your salad. Chop up apple, add strawberries, pineapple, melon. Dried fruit is great as well. My daughters love craisins in salad. So those are my ideas.. what are yours?
