I adore parsnips. They are wonderfully sweet. I usually roast them but last weekend I woke up and decided they would make a good soup. I recently bought an immersion blender and I was eager to try it out.
I did some googling for inspiration.
Ingredients
4 parsnips
2 apples (I used granny smith apples)
1 cup veggie broth
2 cups water
1 red pepper
1 cup red lentils (I used Trader’s Joes)
2 cloves garlic
1 tablespoon butter
1 1/2 tablespoon curry powder
Directions
Cut parsnip, apples and red pepper in to chucks (no need to peel, just throw it in there!)
Throw everything in the crockpot
Cook on high for about 4 hours
Blend it (I used my immersion blender)
Keep in the crockpot on low until it is the consistency
Done and done!!
Ate it everyday for lunch for the next week and loved it until the end!
