Ok...the original recipe was Adobo-Glazed Mini Turkey Loaves. I obviously had a lot of substituting and changing to do. The dish morphed into something totally different, but was still yummy and easy!
I used veg crumbles instead of turkey, and didn't use the egg called for...the result was more of a thick meaty sauce, despite the fact that I baked these mini loaves in muffin tins. I really liked the adobo-glaze. We ended up eating the meatloaf on a platter covered with some no-sugar added pasta sauce and some soy parmesan. Pretty yummy!!
The leftover loaves go into the next recipe that I'll post!
