Get It Ripe: Green Coconut Milk Curry & MapleTempeh Strips

Last night I made Green Coconut Milk Curry and Maple Tempeh Strips from Jae Steele's Get It Ripe. The curry has an insane amount of green veggies in it, including leeks, green beans, snow peas, lemongrass, green bell pepper, Chile peppers, zucchini, and probably some stuff I can't recall. It is amazingly light-tasting and involves very few ingredients besides the vegetables. I have to say, my favorite curry is the one from Hot Damn and Hell Yeah, a decidedly less health-foody recipe than this one, but this was very refreshing and made us feel great after eating.


We had Maple Tempeh Strips with the curry. These are my second attempt at replicating the food-of-the-gods deliciousness of the tempeh bacon at Real Food Daily in Los Angeles. The taste of these was good, but I'm still working on texture. I think I can I think I can...!

These two recipes together created a great healthy meal that was filling yet restorative. Yay Get It Ripe. This cookbook is a 100% surefire for healthy, simple recipes using pure ingredients.
