Eco-Chef Bryan Au Promotes an Organic, Raw, Vegan Diet

For some, sticking to a raw, organic, vegan diet sounds extreme. Enter chef Bryan Au , who's working to change that mindset by offering delicious and easy recipes for those pursuing a diet that's healthy and eco-friendly.
“I decided to self-publish my recipe book, Raw in Ten Minutes in 2005,” Au said of his bestseller. “I wanted to make eco, green cuisine fun, fashionable, and affordable.”
Since then, Au launched an iPhone app that's one of the top-ranked in the lifestyle category; it allows users to look up recipes, watch videos, and ask Au questions in real time.
Of the food plan that his book and app promote, Au says, “This diet is completely organic, which limits stress on the environment. There’s no cooking involved, so there are no fossil fuels created. It’s the most eco-friendly decision you can make for your diet.”
While Au's diet of only raw, vegan foods seems hard to do, he suggests that even a slight change in our eating habits toward this direction can make a positive difference.
“These recipes were designed to help balance out your body's pH and give your digestive system some rest,” he said of his cookbook's offerings. “Even eating just a few of these meals a week helps your personal health as well as the environment.”
