Carrot is chopped into pieces and dressed with tomatoes, dried shrimp, and peanut, then compounded with chilly, garlic, oregano, a teaspoon of soy sauce, lemon, and sugar. This is adapted from papaya salad, which called Somtam in Thai, so it is called as Somtam carrot. Therefore, you should use a mortar and a pestle to mix it.
My mom likes to eat this salad with sushi, a Japanese food with a rich source of protein, carbohydrate, and antioxidant from nori (seaweed).
