I am in China where they serve white rice noodles or potatoes with every meal. How much of this can I eat and be healthy?

I am working as an English teacher and the stress of the new job is effecting my ability to move my bowels. I end up going for weeks in between. I drink warm water and occasionally use epsom salt tablets. But my abdomen swollen and it can't be healthy. The last month since I began the job I think I have been suffering from a buildup of toxins. My lymph glands were extremely swollen and my throat had been unbearably sore. But I found some magic hocus pocus China pills for toxins and drainage that are helping to keeping me functional. Before I got this job I got a bit too thin. I have been eating at work, since they provide meals and I don't want to starve. But besides the vegetables, every meal comes with white rice and often potatoes or noodles made from white flour, as the only starches. I read that brown rice and whole foods are harder for the body to digest so it doesn't absorb as many calories from them. If I eat brown rice will I ever be able to put the wieght back on? Thank you.
