Eat Right, Fight Cancer

Posted Oct 29 2010 12:00am
The beginning of November might mark the end of Breast Cancer Awareness month, but that doesn't mean that as people wrap up Halloween, the scary monster known as breast cancer is going away any time soon. In fact, more than 207,090 new cases of invasive breast cancer are expected to be reported this year, resulting in 39,840 deaths, according to the American Cancer Society .

While most cases are due to genetics, there are some healthy life-style choices to help prevent and lower risks such as regular exercise and mammograms. Diet also plays a huge role in lowering risks. Here are some foods to consume when trying to fight cancer.

Cruciferous veggies such as broccoli, cabbage, Brussels sprouts, and cauliflower contain high levels of phytonutrients. These nutrients, which can boost the immune system and encourage cellular repair, are known to not only stop the spread of cancer, but can also prevent malignant tumors and new cancer cells from developing.

Cruciferous veggies are also known to produce a particular type of estrogen that doesn’t encourage breast cancer. Cook your cruciferous vegetables lightly, perhaps in extra virgin olive oil, to try your best to preserve as many photonutrients as you can. Olive oil is filled with antioxidants and its fats do not oxidize in the body, meaning the cancer risking- free radical chemicals that develop with the process of oxidation are not produced in the body.

Dark leafy greens such as kale, collard greens and spinach are high in B vitamins and folate. According to some studies , those with lower levels of folate are prone to have a higher risk of breast cancer.

Tomatoes are packed with lycopene—a very powerful antioxidant. According to research , this special antioxidant not only gives tomatoes their vibrant red color, but also fights breast cancer cell growth. These immune boosting antioxidants can be accessed better when tomatoes are cooked.

Fruits high in vitamin C such as berries, cherries and citrus fruits (oranges, lemons), are all rich in vitamin C –what researchers believe are cancer-fighting compounds. According to a study , high dosages of vitamin c helped prevent the tumor growth of three different kinds of aggressive cancer in their subjects. Researchers concluded that the ascorbic acid found in vitamin c creates hydrogen peroxide in the body. It is the hydrogen peroxide that destroys the cancer cells according to the study.
