The best way out of a tomato glut is to cook some of Aunty Eileen’s tomato sauce. This has a wonderful flavour and is hard to beat.
Aunty Eileen’s Tomato Sauce (makes 5-6lbs)
4 large onions
2 oz salt
4 cloves (I use 1tsp ground cloves that way you don’t have to fish them out later)
1/4-1/2pt malt vinegar depending on how runny you like it
8 tabs dark brown sugar
2 tsp ground ginger
Chop all ingredients and put in a large saucepan (except the vinegar) . Cook till soft, stir at the beginning so it doesn’t catch till juice gets going. Then liquidise and sieve into another saucepan, add the vinegar and simmer for 20-30mins till the thickness you require. Bottle. Keeps well but once open always put in the fridge. Great with fish too.
