Positively Perfect Potato Salad.

HAPPY INDEPENDENCE DAY!!! May you keep all of your phalanges and your dignity on this fun fueled par-tay holiday! I have spent the day with my little family grilling chicken and Hebrew Nationals. We have also watched some really fun “Pocoyo,” and by really fun, I mean that I would rather chew a lightbulb than watch one more minute. It’s like the bad acid trip that NEVER ENDS.

Yesterday, at the gym, I did the Nike Training Club App’s Total Adrenaline workout. The name fits; reverse crunches, Russian twists, (incidentally, this is NOT what Medvedev does to the truth.) sumo squats, dead lifts. ALL IN 30 MINUTES, BABY! It’s tons of fun. I finished my workout by doing a quick 4 mi on the treadmill at 8:57 pace average. Supa Dupa quick, Supa Dupa fun. I will admit though, watching “Rocky” all day has me thinking of mixing it up a bit. (But not with a cow carcass)

I came home and made THE BEST POTATO SALAD EVER.

  • 4lbs yukon gold potatoes
  • 1/2 vidalia onion
  • 2 chopped red bell pepper
  • 1/4 cup light mayo
  • 1/4 cup dijon mustard
  • 2T relish
  • 2T apple cider vinegar
  • 2T regular EVOO mayo
  • salt and pepper

Wash, cube, and boil potatoes until JUST tender. Chop onion and bell pepper. In a large bowl, combine all other ingredients and whisk. Add potatoes, peppers, and onions and toss.

Now, go FOURTH and party, and may the FOURTH be with you.
