Meal Plan Monday: {Gluten-Free} Weekly Dinner Meal Plan

It is the LAST week before school starts and I am keeping dinner pretty simple every night.


MONDAY:   Grass-Fed Gourmet Bun-less Burgers topped with Sauteed Mushroom and Onions, Sauteed Kale, Grilled Eggplant, Grilled Zucchini and Avocado

TUESDAY: Chicken and Shrimp  “Enchiladas”  via Everyday Paleo, with Grilled Peppers and Salad

WEDNESDAY: My Mom’s French Beef Stew , but I am Crockpotting (that IS a word) it.

THURSDAY: Spaghetti Squash with Meat Sauce and Steamed Broccoli {Recipe will post that evening}

FRIDAY: Aromatic Vegetables with Savory Flank Steak via Mark’s Daily Apple

SATURDAY: Dinner Out or Slightly Spicy Mango Shrimp  with Baked Bacon Brussel Sprouts and Mashed Sweet Potatoes {Recipe will post that evening}

SUNDAY: Grilled Chilean Sea Bass with Polenta, Kale and Salad {Recipe will post that evening}


I also plan on breaking out our ice cream maker and putting it to good use. It’s been really hot and humid here and I am going to make Pumpkin Ice Cream .
