Klout, the online scoring thing of social media, apparently thinks I’m influential in “bacon”. How does one influence someone about bacon? Is it a peer pressure thing? Do I carry around bacon bits in my purse and convince you to eat some? Do I convince you to use bacon fat as lip balm? (it’s like a lip smacker, only porkier!) I am sorry Miss Piggy, I am apparently the arbiter of your doom.
If I am influential in bacon, I also want to be influential about peanut butter. I eat it way more, like it a lot better, and they are often sold in single serving pouches-eliminating the messy bacon bits issue. Plus, they’re delicious if combined.
What I find hilarious is that I eat bacon MAYBE once per week, I run 5x that amount. Am I influential in running? Of course not, that would be too obvious. My goal is to rack up as many arbitrary topics as I can. I am *really* hoping to become influential about clog dancing. I’ve never done it, wouldn’t know where to get the snazzy footwear, and I am pretty sure I’d fall flat on my face. I still want to influence you to clog dance. IT’S ALL THE RAGE PEOPLE?!?!? Didn’t you just read that somewhere?
I am influential in food, which makes sense because I eat some at least three times a day. I’d like to influence you fine people to eat some too! How about an egg dish? Yes? Can I influence you to make an Israeli egg dish? I promise, it’s good. Just try it. Takes very little time. I promise. (Can you feel me influencing you? Does that sound dirty?) This is called “Shaksuka” but it’s probably more easily remembered as “eggs poached in spicy tomato sauce”.


Shaksuka or Eggs Poached in Spicy Tomato Sauce

Ingredients (serves 4)
1, 28 oz can or box of chopped tomatoes in juice
2-3 fresh tomatoes
3-6 italian hot peppers, anaheims, or jalapenos, chopped
1 red bell pepper, chopped
1 onion, diced
1 tbsp chopped garlic
1 tbsp hot paprika
salt and pepper
2 tbsp extra virgin olive oil
1 cup tomato juice or V8 or bloody mary mix
optional
Instructions
heat the olive oil in a large skillet on medium high
saute the onions and peppers until soft
turn down the heat to medium and add garlic and paprika
add tomatoes (jarred and fresh) stir
add tomato juice
when the tomato mixture is soft, hot, and bubbling,
stir in salt and pepper to taste
make 6-8 wells in the sauce and crack an egg into each well
cook for another 8-10 minutes or until the whites are just set.
optional
serve with pita and or feta/pecorino cheese
top with parsley
