Healthy Recipe- Slow Cooker Chicken and Sweet Potato Stew

It’s been a bit colder here lately, thank goodness.  Texas is known to stay in the 90s up until December sometimes.  I’m glad that we are having some sort of fall type weather even if it is fleeting.

 

Fall weather makes me want to do two things:  bake and use my crock pot.  Well, three things if I count snuggling in my jammies all day.

So today’s recipe is brought to you by my Grandma and my crock pot.

 

Thank you, Grandma, for creating this recipe book.  And I’m sorry I keep modifying all of the recipes in it, but I love that I can still eat my favorite foods and make them healthier.

Basically the only thing I changed from this recipe was switching the sweet potatoes in for regular potatoes.

Instructions: Peel and chop your sweet potatoes, chop your carrots, drain your corn and green beans, and then dump everything in your crock pot.  Cook on low for 8-10 hours or high for 4-6 hours.  That’s it!!

I love super easy recipes.  And it is sooo good!  The sweet potatoes add a little zing to the stew that I really enjoyed.
