This is a favorite healthy recipe of mine. They are Italian style and could easily be used as meatballs instead of muffins. The onions as well as the egg keep them super moist. They are delicious as is but could be phenomenal with some no sugar added organic tomato sauce as well! Enjoy!
2 pounds, ground turkey
1 diced red onion
3?4 cup oatmeal
1 whole egg
1 teaspoon dry parsley
1?4 cup of low fat parmesan
1?4 cup low fat milk
1?2 teaspoon of garlic powder
1 teaspoon of oregano
Preheat oven to 375oF.
Mix the ingredients together in a mixing bowl
Lightly coat a muffin pan in with cooking spray
Fill 8 of the muffin pan spots with the muffin mix
Bake for 30 minutes.
