Pour mixture in your pan and bake at 350• for 25-30 minutes or until a toothpick inserted in the center comes out clean. Now I was concerned that this would be a bit dry, so I made a strawbery glaze to go on top using 1/4 cup of fresh stawberry juice and 1 cup of confectioner’s sugar. There was really no need for that addition. It was light and fantastic without any icing. And even more scrumptious for breakfast the next day. Cake for breakfast? Why sure!! But I do think it also tastes amazing with a light strawberry glaze. So if you want a little extra sweetness, make a strawberry or regular glaze to go on top. Soo good. Either way- it’s a nice way to enjoy cake with lower sugar, lower calories, and lower fat.
