Healthy Banana Cake Recipe

Hi everyone!

I posted the other day about my Easter Sunday .  We had an excellent Easter lunch, my mom and stepdad came to visit, and I made a healthier version of my Great-Grandmother’s banana cake.

One thing I LOVE about my family- is that we have all grown up in the kitchen.  I’m not the greatest cook, but I love to bake.  And my Grandmother made us a recipe book years ago that I use religiously.

But a lot of these recipes are comfort foods and may not be in the healthy guidelines that I”m trying to follow, so I’ve modified a bunch of them.

I have been wanting to find a recipe to use with my old bananas, but I didn’t want to do the normal banana bread recipe.  In my mind, I wanted a fluffy cake with a glaze topping but I wanted it to be a bit healthier, with lower sugar, and lower in saturated fat.

So I opened the trusty cookbook and found my Great-Grandmother’s recipe.

Preheat your oven to 350 degrees.  In a large bowl, cream together the butter and sugar until it is a fluffy light consistency.

In a separate bowl, mash your bananas and applesauce and mix together.

In ANOTHER separate bowl (I know.  I dirty a ton of dishes…more on that later)  sift together your  flour, baking powder, and salt.

Okay.  Now you want to slowly beat in your banana mixture and eggs to the creamed butter and sugar, and then slowly add the dry ingredients on top of that.

Your batter ends up being a nice fluffy texture.  I used a bundt pan for this, but it would work well as cupcakes, or regular round cakes.

Pour mixture in your pan and bake at 350• for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Now I was concerned that this would be a bit dry, so I made a strawbery glaze to go on top using 1/4 cup of fresh stawberry juice and 1 cup of confectioner’s sugar.

There was really no need for that addition.  It was light and fantastic without any icing.  And even more scrumptious for breakfast the next day.

Cake for breakfast?  Why sure!!

But I do think it also tastes amazing with a light strawberry glaze.  So if you want a little extra sweetness, make a strawberry or regular glaze to go on top.  Soo good.

Either way- it’s a nice way to enjoy cake with lower sugar, lower calories, and lower fat.
