Get a juicer, and juice all of the veggies you want into a lovely juice that kids will love. I make a mixture of spinach, broccoli, and celery. Always include carrot and apple to make it sweet. You can also put some honey or agave necter in at the end to make it extra yummie for the kids!
Juice is a wonderful way to get gets to eat (or drink) their veggies. I also like to grate them (carrots, zucchini, cucumber, anything hard enough!) and keep them on hand to add to almost anything. They can go on pizza, in sandwiches like grilled cheese or tuna, in a quesadilla or in macaroni and cheese. Many kids are turned off by the texture of vegetables, and this solves that problem.
