Yeah, it’s Wednesday already!  Many thanks to Jenn over at Peas and Crayons for Hosting  another week of WIAW


So the high in Chicago yesterday reached 9!  That’s right, a measly 9 degrees.  Factor in the wind chill though and it felt like -15!  It was a cold one folks.  I guess I should have been grateful that the sun came out!  We are freezing over here in the windy city!


Image After a great and speedy run on my treadmill.  I had a couple of slices of Ezekiel bread toasted with almond butter and chia seeds.  I was totally out of almond milk so opted for some green tea on the side instead of coffee.

This is how my snack started while Sara and I were shopping at Target.  I should have know better….

We came home from lunch and we were both freezing!  Eggs sounded really tasted so I scrambled up 1 egg and 2 egg whites with roasted broccoli and kale and topped it with salsa and nutritional yeast.  It totally hit the spot!


After I got Sara down for a little nap I enjoyed this!  We are all enjoying the case of yogurt we got last week thanks to the amazing folks at Chobani!

IMG_3091 We had a family dinner over at my parents last night since it was the last night that my sister and her hubby were in town.  Mom went all out!


Vegetable and barely soup to start which was amazing!  Seriously, when the high is 9 degrees out soup is the best!

IMG_3094 Rack of lamb, roasted veggies and sweet potatoes.  Rack of lamb really isn’t my thing, but I tried a bit and loaded up on veggies!  It was a great dinner.  I forgot to photograph my dessert which was some fro-yo.  I guess I temporary forgot it was freezing out until I walked outside!

I’ve had a few nights off from cooking and need to get back into the swing of things.  Anyone got any easy dinner recipes to share?
