WIAW: Healthy Snacking with Betty Lou’s and Giveaway!

Welcome to another fantastic week of WIAW!  Thanks to Jenn for being our host!

What I Ate Wednesday

Yesterday was insane!  I did get the chance to get up early and break in my new running shoes!  Yeah!  I did a quick 3.1 and then 30 minutes lower body Tabata Boot Camp .  I love  TBC!  I’m seeing such amazing changes in my body!

Needless to say I was starving afterwards!

Starbucks was on the way to my meeting!  I was all out of Almond milk at my house! I needed something.  Small coffee with soy topper!  My new favorite drink at Starbucks

I had a work meeting which Sara was so awesome at!  Afterwards, I took her over to the YMCA so she could play in the kids zone, which is what she was begging for!  This gave me the chance to catch up on some work!  Win win for all!

Moving onto lunch!  We were running and had so much to do so Sara and I had a nice lunch out at Panera  We rarely eat out anymore for lunch but it was just one of those days!  I love their black bean soup.

Snack was on the go before gymnastics and it was perfect as I just happened to get these PRO Bar s in the mail!  Yum!  A perfect little sweet snack to hit the spot on a busy and crazy day!

For dinner I made this awesome coconut curry shrimp dish that I pinned on Pinterest!  I bought frozen wild shrimp from Trader Joe’s and it was awesome!  The Hubs said it was in the “top 5.”  I wanted some extra veggies and so I roasted some asparagus and you would never believe it but Sara decided that she was going to try and “love” asparagus!  Yeah!!!

After dinner I had a client come to the house to train!  From there the day was over!  The Hubs and I caught up on The Following because I had a meeting Monday night that caused us to miss it!  Ahh, only 3 more shows left!

It’s supposed to snow on Friday!  WHAT?  Well, they are calling for a freezing mix of snow and rain!  Enough already!!  How has Spring been treating you?
