Hey hey hey hey!! I’m back in the south ;) We spent the better part of yesterday on the plane heading back, going from this:

To this:

I woke up early yesterday morning, anxious to get in a run before we met up with the familia for our last Tucson meal. I did 5 miles on base before going back to the hotel and then we all met up for b-fast at my favorite bfast spot ever: The Good Egg (or as I prefer to call it: The Incredibly Delicious Egg)
I got the veggie omelet with no cheese or sour cream, cooked in spray instead of oil, with a wheat pancake instead of the english muffin and fruit instead of hash browns. I definitely like to make my own meal off restaurant menus ;)

(I forgot to ask them to make it with egg whites… oops, but ate it anyway- a little yolk didn’t hurt me)

It was soooooo good!!!! We said our good-byes, returned the rental car and went to the airport. My mom and nana loaded our bags up with lots of goodies, airplane food and TAMALES!!! Oh yes :D

I would be lying if I said I wasn’t homesick already :/
This morning, I had a truly HORRIFIC bfast.
It was disgusting, really. So don’t ever make this.
Soaked buckwheat groats with almond butter and 1/3 crumbled Larabar:

Half of it ended up going in the garbage disposal –it was that unpalatable - so I just ate the rest of the Larabar and went to Wizzle for some fruits and veggies.
I went to work for a little while, then came home for a delicious lunch.
I used the spiralizer to make curly noodles out of zucchini, then topped it with a cheezy sauce made in the Vitamix out of cashews, water, sea salt, garlic, lemon juice, nutritional yeast, tumeric and pepper.

Since I didn’t soak the cashews, it came out chunky but tasted like heaven.
With a huge glass of coconut water, it was a perfect little lunchtime feast:

My sweet tooth hit with a vengeance, so instead of my usual one cucaracha with AB, I had two:

I unpacked some of our Tucson goodies before going back to work.

Peanut butter pretzels for the pilot, bars from the madre, tea, almond butter, salsa, Amy’s frijoles, a raw cookie, millet, goji berries and curry twigs

Dried pineapple rings, dulse, raw cahsews, dates, dragonberry (!), mung beans, dried chickpeas, figs, brown rice and pita crackers for Jeni
While I was at work, all I could think about was this raw cookie…..

I guess the dates didn’t do a very good job of silencing the sweet tooth, so when I got home, I ate it.

It was like one of those soft Little Debbie oatmeal creme-filled cookies, but in chocolate flavor..and raw!! Made out of cocoa, cashew and almond flour, honey and coconut, it was A-FREAKING-MAZING.
This week is a little hectic with school stuff (I have a huge presentation tonight and two tests coming up, which I shouldn’t care about because I’m leaving VSU but being the type A that I am, I’m still obsessing), starting a new job a week from today (on top of school, teaching, and my job at school, which I only have two weeks left), and our house isn’t as clean and sparkly as I like it.
Even though I don’t usually eat emotionally, when I’m stressed, I want SWEET or SALTY. Thank goodness I’m filling the void with healthier options, because a pint of Ben and Jerry’s could be destroyed right now ;) What’s your stress food???? Mine would have to be popcorn- I just love it.
Well I’m off to teach spin, going to school for our Organizational Behavior presentation, then back home for tamales with my pilot :D
