Ever since I saw ABC’s “The Food Revolution” , I have been dying to try the healthy version of Sloppy Joe’s that they serve at one of the schools. However, I could not find the recipe on Jamie Oliver’ s website anywhere (if you happen to have a link please share)! So, I improvised, threw some stuff together, and hoped for the best. Luckily, it came out delish! (Photo source ).
Veggie Packed Sloppy Joe’s Ingredients
1/2 cup mushrooms
3 celery sticks
4 cherry tomatoes
1/2 green bell pepper
1/2 red bell pepper
1/2 cup black olives
1lb lean ground beef (or turkey)
1 packet of Sloppy Joe seasoning
1 cup of water
Chop and puree all veggies (I chopped them all up and threw them into my magic bullet so it made a paste).
Brown the ground beef (or turkey) and drain any fat.
Add 1 cup of water, the seasoning, and paste to the meat. Bring to a boil, and then let simmer for 10 minutes.
Serve on a roll & enjoy!
