TV Talk and Almond Crusted Chicken

Good morning!  Let’s talk TV for a minute before we get into food! I have to take a moment to talk about one of the newest shows on TV that I am absolutely obsessed with,   The Following .  It’s on Fox.  Have you seen it?  I haven’t been this into a show since the hubs and watched the entire first season of Homeland in two days.  If you haven’t checked it out, I highly suggest you do.  You can find all the episodes online here .  You are only four weeks behind.  I can promise that you won’t be sorry and you will be hooked after you watch the first show!  Do any of you watch it?

Smash came back last week!  It’s one of my guilty pleasures!  I love the music and it’s very entertaining!  With Smash and The Following being added to our TV list, I think the hubs and I might be dropping NBC’s, Deception.  It had us for a couple of weeks but it’s getting kind of dry so I have a feeling it’s going to cut very shortly for us!

I’m trying out the ZipList recipe plugin today.  As I mentioned last week, I just made the move to self-hosted and I am looking for a good recipe plugin.  Would love some feedback. If you use another one let me know.  I’m not committed to anything at this point.  I’m just learning!

I made this Almond crusted chicken last week and everyone loved it!  It’s clean, simple and requires just a few household staple ingredients!

Almond Crusted Chicken

Prep Time: 5 minutes

Cook Time: 17 minutes

Total Time: 23 minutes

Serving Size: 2

Ingredients

  • 2 chicken breasts
  • 1/3 cup of raw unsalted almonds
  • 1T garlic powder
  • 1 egg white
  • Lemon slices for garnish

Instructions

  1. Preheat your oven to 425 degrees
  2. Crush almonds in a food processor and process about 5 seconds.
  3. Add garlic powder to crushed almonds.
  4. Place egg white in one bowl and crushed almonds in another bowl.
  5. Dip chicken breast in egg mixture and roll in almonds
  6. Place on a greased cookie sheet and bake for 16-18 minutes
  7. Serve with lemon slices to drizzle over chicken
