
So I have found a new favorite breakfast! The good thing about this, it could probably be eaten at any meal! I found a recipe for Sweet Potato Pancakes inOxygen Magazine. I left out the unflavored protein powder, because I didn’t have any, but instead, added an extra egg white.
Here is the recipe:
1 medium sweet potato or yam
1 scoop unflavored, unsweetened protein powder
cajun seasoning to taste
4 egg whites
1. Preheat frying pan on medium heat
2. Grate sweet potato or shred in a food processor. Combine in a bowl with protein powder and seasoning. (I used pepper and garlic salt instead of cajun) Mix well.
3. Mix in egg whites.
4. Place one scoop of potato mixture in frying pan, shaping into circle. Repeat for 4 pancakes.
5. Cook for about 5 minutes-or until golden brown-on each side, spraying tops with cooking spray before flipping.
I then added some cottage cheese (adding more protein) and some chopped tomatoes. These were so dang good!
