Howdy from civilization!!! We’re here in glorious Orlando -feels so good!- and I just got back from the best.yoga class. ever. :D
Yesterday, I spent most of the day cooking food for the baby dinner.
I got so many awesome meal suggestions and decided to go with a Spinach and Smoked Gouda Quiche. I followed the recipe exactly, but since it was crustless and I really wanted to use my tart pan, I put a pie crust in there and pre-baked that for 7 minutes before filling it.
I’m pretty happy with the results:

The pilot and I decided we’re going to have a healthy quiche for dinner this week, because making that bad johnny left me with a HUGE hankering!
I put together a salad with romaine, olives, garbanzos, grape tomatoes, mushrooms, artichoke hearts, fresh lemon juice and some Italian cheese:

And started to work on the cupcakes!!!
Using Ina Garten’s recipe, I got the chocolate cupcakes in the oven and went to work on the peanut butter frosting…
If this isn’t food porn-ilicious, I’m not sure what is:

To prevent me from saving some icing for myself to nosh on, I crunched on some PB puffins:

Cupcakes for the family, and I also packed up 12 to bring to Orlando with us:

Megan, the pilot and I left the casa, dropped the meal off, and got on the road to Orlando.
Viesa was co-pilot:

We got in SUPER late and were starving… so we got some Papa John’s whole grain cheeseless pizza with tons of veggies.
I didn’t take a pic –the camera was in the car and I was starving and exhausted…sorry friends- but I guarantee it was delicious :D
This morning, I woke up feeling like absolute garbage after a restless night and our midnight pizza feast.
Megan and I headed to oven yoga for a lovely sweat sesh. I was sweating like a maniac and am pretty sure we smelled like whole grain pizza crust. Hahah, nasty :D
Yoga was amazing –not quite as good as vinoyoga but it’ll do- and afterwards we went to Whole Foods to get some juice from the Juice bar.
I chose the carrot detox juice with carrots, kale, beets, apple, celery and ginger:

I also had my favorite Larabar:

And two egg whites with sea salt, paprika and red devil hot sauce:

Now we’re getting ready to go to Daytona for the day for my cousin’s dance competition, then coming back to help her get ready for the prom. I totally miss that about high school—getting all dressed up for proms and dances was so much fun! So tonight, I get to live vicariously through my little cousin ;)

Today’s tip: I’ve received some emails from readers needing some work out motivation and wondering how I ‘manage to do it so often’. The thing is, you have to take the WORK perspective out of working out. Yes, you have to push yourself to see results, but you should definitely choose a method of exercise that you enjoy! If you hate the treadmill that much, try something else, like the elliptical or stairmaster. Take a group fitness class. Keep trying different things until you can find something that you love and want to do every day! It will help you to stick with it, you’ll see amazing results and you’ll be keeping yourself happy in the process. Definitely a win-win situation :D
