Brendan’s sister Kate is leaving today to go back to school so I joined his family last night to have some snacks, drink some wine, and watch the sunset at a near-by winery.
Kathy’s Bruchetta-to-go Recipe Ingredients
Olive Oil
Garden grown tomatoes
Garden grown basil
Ciabatta bread or french bread
Grated cheese
Directions
Cut up the ciabatta bread. Drizzle olive oil on and toast both sides in the oven (broil setting). Pack in a to-go container.
In a separate to-go container, dice tomatoes and mix with basil. Top with olive oil.
Pack your favorite grated cheese.
Once you get to your location, add the tomato/basil/oil mix over top of the bread, and top with grated cheese!
