Sunset, Wine, Bruchetta, and a good time!

Posted Aug 28 2010 9:14am

Brendan’s sister Kate is leaving today to go back to school so I joined his family last night to have some snacks, drink some wine, and watch the sunset at a near-by winery.

Kathy’s Bruchetta-to-go Recipe
Ingredients

  • Olive Oil
  • Garden grown tomatoes
  • Garden grown basil
  • Ciabatta bread or french bread
  • Grated cheese

Directions

  1. Cut up the ciabatta bread. Drizzle olive oil on and toast both sides in the oven (broil setting). Pack in a to-go container.
  2. In a separate to-go container, dice tomatoes and mix with basil. Top with olive oil.
  3. Pack your favorite grated cheese.
  4. Once you get to your location, add the tomato/basil/oil mix over top of the bread, and top with grated cheese!
