Roasted Delicata Squash Wedges – Low Calorie, Low Carb, Gluten Free

Fall brings out vivid colors and also some of the best low carb foods of the year.   It’s almost as if the creator knew we were going to start getting fat around this time!    This simple and easy squash recipe is low carb, low calorie, and gluten free.   Not to mention, cheap because is in season!

The food network gave this recipe 4 and a Half Stars so it has to be good right!?   Here’s everything you will need for this squash recipe.

(serving size – 4)


Non stick cooking spray

4  teaspoons brown sugar substitute
2 -4 teaspoons cinnamon
2 to taste salt
4 teaspoons brown sugar substitute
4 teaspoons chili powder
2 to taste salt

Preheat the over to 425 degrees.
Wash squash and cut the hard ends off.  Then cut them in half.
Using a spoon take out the seeds and strings.   Then cut them into 3 or 4 wedges
Next place the on a cooking sheet with the SKIN DOWN.   Spray with cooking spray, then add your seasonings.
Roast in the over for 40 minutes.
