Pomegranates, Metformin and Me?

Yesterday was a roller coaster of emotion for me. I checked our voice mail at home and got a message saying my blood tests were normal and they hoped that helped. The rough part was knowing that I've tried to lose weight by eating right and exercising, but I wasn't losing any weight. I knew something was wrong with my body chemistry, but I couldn't get an answer!

I spent the rest of the day trying to get a hold of the doctors office to see what the next step would be, if any. I went on a very frustrating 2.5 mile run after work and finally got an answer from the doctor's office at about 5:15 PM last night! I'm going on Metformin which is a drug used to treat Insulin Resistance and Polycystic Ovary Syndrome for a month to see how my body reacts. Although one of the side effects to the Metformin is weight loss, so we'll see how it helps.

Now on to the eats! Over the weekend I was sent a package of Pomegranate Juice from Janny at POM Wonderful. The hubs and I have been mulling over ways to make use of it in recipes and meals instead of just drinking all of it! We started out with salad dressing last night.

For the dressing we mixed olive oil, white wine vinegar, pomegranate juice, Dijon mustard and agave nectar to taste. We prefer a more tart/tangy vinaigrette so we kicked up the vinegar and pomegranate but you could increase the agave to make it a little sweeter!

We served the salads (topped with locally grown cherry tomatoes from Goose the Market and pecans) alongside a huge plate of sweet potato fries. We topped the fries with this bourbon barrel smoked paprika and the sweetness of the locally grown potatoes really blended with the vanilla of the bourbon barrel notes! It was a success of an evening after a crazy day filled with emotion.

I'm really looking forward to this weekend, I'm scheduled for 8 miles (the longest I've EVER gone) and then from there the hubs and I are taking a day trip with the dogs to Indiana Dunes! I thought it was really sweet that the hubs knew how much I was craving the beach so he's taking me to the closest thing to the ocean we have around here!
