THE BIG MEAL OF THE DAY: SWEET POTATO BREAKFAST CASSEROLE *Oh my goodness, this was sooooo delicious. I think I will make this when my family comes to visit for Thanksgiving. It would be the perfect breakfast. I can't believe I actually came up with this on my own. The portions were really pretty big. I need a new pan to cook in, it was hard to divide up these round dishes 5 ways.
INGREDIENTS: (Note: I am really starting to try to weigh things more than measure. This is something that Leigh always talks about and it really makes sense. I'm trying to make the switch!) SWEET POTATO - 17 oz EGG - 2 EGG WHITES - 5 CHEESE - 3/4 CUP OLIVE OIL - 1/2 TBLSP ONION - 2.8 OZ CHERRY TOMATOES - 5 OZ TURKEY BACON - 5 SLICES CHICKEN - 5 OZ
1. Cut the sweet potato into thin slices. Put the slices into a pan. Any size works. I didn't have one so I used two round corning ware dishes. 2. Bake sweet potatoes for 25 minutes at 450 degrees 3. Cook bacon and chicken 4. When the sweet potatoes are finished cooking put the cooked chicken, bacon, and cheese on top. 5. Mix the eggs, oil, tomatoes, and onions together. Poor on top of sweet potatoes, chicken, bacon, and cheese. 6. Add whatever spices you want. Pepper, garlic, and salt is what I used. 7. Cook mixture at 350 degrees. It took about 25 - 30 minutes for the eggs to fully cook. Keep an eye on it.

Today I warmed up on the treadmill for 11 minutes (1 mile) and then did Rachel Cosgrove's metabolic workout. I love doing this workout. Actually, I hate it while I'm doing it. I love it when I'm done and I've burned over 400 calories.
Max out pushups: 1st time - 18 PUSHUPS (I don't think I really maxed this out. I did it in between intervals during my workout and I was already huffing and puffing) 2nd time - 27 PUSHUPS 3rd time - 21 PUSHUPS
SUPPLEMENTS: 5x fish oil pills = 5g 1x multi vitamin 1x calcium +D pill
WATER: 147 (22 was sparkling)
WEIGH IN / MEASUREMENTS: (Just weight today) WEIGHT - 131.6lbs (down .4 lbs since yesterday and 1 lb since DAY #1)
I was hungry today. I tried to wait as long as I could to eat - but not more than 3 hours. My body really needs to eat every three hours. If you took Leigh's quiz today I had 4 D's. This is what it says about me:
You are likely the “skinny fat” and have a hard time achieving fat loss because it isn’t fat loss you really need but Body Recomposition. You likely are pretty lean as it is, fear getting fat, and are more likely to not eat when depressed rather than let Ben and Jerry ease your pain. Catabolic is more the name of your game. While you have low hunger spikes this isn’t always a good thing and could be from undereating do to too much stress in the body that has shut down certain signals in the body. You will carry higher levels of body fat even at lower weights and are set up for just as many health issues as the A’s.
What to do? Eat! Since eating and hunger might be a problem for you though you would best be served by giving your body time to process everything. Try all day snacking but don’t avoid protein. Turkey and cheese can be a snack and you need the protein. Basically get in as many meals and snack as you can through out the say, keep caloric dense items with you, and make your training more strength based than aerobic.
Pass it around and Break the Dogma of Meal Timing and remember, your body is ruler and usually knows more than you think.
I HATE to think that I'm skinny fat - YIKES! But if you look at my pics I would say that's probably true. I do a lot of strength and lately have been cutting down on the cardio. Hopefully that will help. I'm hoping to start a new lifting regimen after this 30 days is over. Maybe NROL for Women? Anyone have other suggestions? I have Tosca Reno's (author of 'Eat Clean') lifting book and I would really like to sit down and read that. She has some interesting workouts. The results of Leigh's quiz seems to be right on for me otherwise. I already eat all day long. Usually about 5-6 meals.
