New Things November?

It really does feel like a new era around here with a crisp, clean, fresh blog layout (the picture is from our trip to Germany this past May) and and my first half-marathon looming on the horizon. I'm really excited for the expo on Friday (I get to hear Hal Higdon speak) and the race on Saturday! Today has been a day of working on my Examiner articles (including one on the Couch to 5k program ), the hubs totally redesigning the blog and lots of delicious autumn eats!

For breakfast we had an amazing omelet filled with applewood smoked thick cut bacon and brie cheese. The hubs and I split a three egg omelet so it wasn't too big of a breakfast. That kept us going for most of the day until we decided to take a break from blogger and start on dinner.

I had a leftover pumpkin waffle from yesterday morning topped with a dollop of plain yogurt and a drizzle of sugar-free maple syrup. I really love these waffles and they are even made with Oikos and pumpkin butter. We're still trying to perfect the recipe but when I do I'll post it for sure! I was a hungry beast and my stomach was begging for MORE so I settled on a delicious treat.

Oh yes, coconut love. A little Tropical Traditions Coconut Cream Concentrate spread on a Trader Joes 100% Whole Wheat Stone Ground Mini Bagel. We had to heat up the jar of Coconut Cream to get it to mix evenly but it was so worth it! The coconut cream concentrate reminded me of coconut butter all creamy and just a little nutty. It was soooo good!

To top off the evening we had homemade pumpkin soup with acorn squash, curry paste, coconut milk, chiles and onions. We liberally sprinkled some chunks of french bread and devoured it while watching the end of the Packers/Vikings game. I think my taper is going pretty well! I'm wishing I was out running, but I know I need to be smart about my training. I'm still up in the air about my trainer session on Tuesday. I may re-schedule for the week after the race so that I can be 100% on Saturday!
