My ME day and Butternut Squash and Black Bean Soup Recipe

Having a ME day yesterday was so wonderful! It’s rare to have a full 9-10 hours to myself to get a bunch of things done, but when the opportunity rises I’m all about it! The Hubs woke up at 5:15am. That’s the normal time the alarm goes off when we are working. Since we were in bed the right before at 9:00 (seriously no joke.) I got up and headed downstairs to do a 30 minute Tabata Bootcamp on the upper body! I finished as Sara was waking up! Everyone was out the door by 7 and my bags were packed to head to Bikram. I had a great practice and then headed over to Road Runners Sports to get fitted for new shoes!
It was such a wonderful process! I was fitted in 2006 and have been happily running in my Adidas Supernova’s since then! No complaints really but my speed has increased and I felt like foot was a bit smaller!
Anyways I went through what they call the Shoe Dog Process. I answered a series of questions, ran barefoot on the treadmill and watched a slow motion play back of my running as well as had computerized images taken of my feet! Technology has come a long way since 2006 !
I tried on all sorts of shoes and ran in them on their treadmill which is kind of hard because really what’s a 2 minute run going to tell me about how these shoes will feel after hundreds of miles. The good news is that I have 90 days to test out the shoe I purchased. If I am not happy I can bring them back for a full refund!
So where did I end up? Well, after running in about 5 different pairs of shoes I ended up with these!
The Adidas Energy Boost made the cut! I’m still sticking with Adidas but here is the major change. I went down from a 7 1/2 to a size 7! These shoes are awesome, they feel great on my feet and I am excited to give them a whirl! I almost came home and went for a run but decided that after the bootcamp, yoga and the running I did in the store, that was enough! I’ll have plenty of time in the future to run in these guys!
After a few more errands, I came home had lunch and did some food prep! Then it was back out again to hit up Target, Whole Foods and a few other stores!
It was a great day! It was a busy day! I got done everything I wanted. Sure, it wasn’t a Spa day but who needs that when you have time to do all the things you want to in a day without feeling rushed!
I’ve been promising you guys this soup recipe. Here is this awesome soup that I literally threw all together with what I had in my house when I came home from Bikram last weekend! So easy! Especially if your butternut squash is already cubed. I buy the squash from Costco and keep it in my freezer for when I make soup. So easy!!
Butternut Squash and Black Bean Soup

Recipe type: Soup
A hearty comforting soup that will leave you full and satisfied
1 tablespoon olive oil
1 small onion chopped
2 garlic cloves chopped
1 can of black beans drained and rinsed
1 can of chopped tomatoes (do not drain)
3 cups of chopped butternut squash
6 cups of vegetable stock
½ cup of uncooked quinoa
1 teaspoon of oregano
¼ teaspoon of cayenne pepper (this gives the soup a small kick so omit if you don’t like spice)
salt and pepper to taste
Heat olive oil over medium high heat.
Add garlic and onion and sautee for 3-5 minutes
Add chopped squash and continue to cook for an additional 5 minutes,
Add tomatoes, vegetable stock, beans, quinoa and spices.
Bring soup to a rolling boil and then cover and simmer for 20-25 minutes until your butternut squash is soft.
Garnish your soup with cilantro or greek yogurt for some added creaminess. The Hubs added some leftover chicken to his soup for added protein but this soup will leave you plenty full!
