This week we have five nights of eating at home so we need to plan out our meals even more!
Sunday - Pineapple Black Bean Enchiladas from this Recipe.
Monday - Eggplant-Ricotta Rolls with Roasted Red Pepper Sauce from the March 2009 issue of Shape Magazine
Tuesday - Spiced Pork Chops with Apple Chutney from the March 2009 issue of Cooking Light with a side of green beans.
Wednesday - Spaghetti and Meatballs
Thursday - Goat Cheese and Roasted Corn Quesadillas from the March 2009 issue of Cooking Light with a side of rice and beans.
Friday - Pizza with some sort of meat and Rod's homemade giardinara. Also with some sort of snacks for when we watch our movie.
Saturday we're meeting up with people at the Brass Ring and I'm hoping to fit in Yoga in the AM. Who knows what Sunday will bring (my birthday).
I'd also like to make these chickpeas and whip up a batch of hummus for healthy snacks on the go this week. I'm also adding 2% Milk, Apples and Bananas to our shopping list so I can try to improve on some of the goals that I discussed with the nutritionist on Tuesday.
