Ingredients
1 1/4 cup flour
1/2 cup sugar
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup oats
1 1/4 cups pumpkin puree
1/4 cup oil or applesauce *I wanted to try applesauce, but didn’t have any in the house
2 eggs beaten
1/2 cup milk
Directions
1. Preheat oven to 350°
2. Oil or spray muffin tinwith cooking spray.
3. Sift all the dry ingredients together.
4. Add the remaining ingredients until just moistened.
5. Divide into 12 muffins and bake for 15-20 minutes until cooked in the center.
6. Remove from pan after 5-10 minutes let cool completely.
7. Place in an airtight container,if possible make the day before the longer they sit,the more they moisten and develop more flavor.

Fat – Torching Cookies
Ready in 45 minutes •makes 76 cookies
1 1/2 cups whole wheat flour
2 cups whey protein
1 teaspoon baking powder
2 teaspoons cinnamon
1 1/2 cups low fat small curd cottage cheese
1/2 cup honey
1/4 cup canola oil
1 egg
2 tsp vanilla extract
1 cup rolled oats
1/2 cup semisweet chocolate chips
1/2 cup walnuts, chopped
1. Preheat oven to 350°
2. Combine first 4 ingredients in a large bowl and blend with a fork.
3. In a seperate bowl, combine next 5 ingredients and whisk together with a fork, or use an electric mixer or food processor.
4. Add wet ingredients to dry and mix with a fork. Mix in the oats, chocolate chips and walnuts.
5. Drop by teaspoonfuls onto an oiled or parchment paper lined baking sheet. Bake 10-12 minutes until the cookies are slightly brown on top.
