Happy Friday!! Woo hoo, Fridays are coming so fast these days with the incredibly short weeks. Too bad it’s back to reality for all of us Monday as our lives and schedules resume their normal chaos. Oh well, it’s been a great couple of weeks. The hubs and I saw Argo this week. It was amazing. It’s rare that we get to see movies, but two is a week is such a treat!
Ok, so you all know that breakfast is the most important meal of day. In fact, these days you can find more information on the web about healthy ways to start your day off. As a kid, I often neglected breakfast. Now, I find myself so excited about breakfast, especially after a workout. So, let’s talk about what I have been eating lately. Well, for starters, I discovered this at Costco last week. I really try to stay away from impulse buys, but this just looked so good and these days I’m totally craving something hot in the morning.
First of all, one serving which is a 1/2 cup, has 7 grams of protein and 5 grams of fiber. It keeps me full all morning. I like to add a dash of cinnamon and this week I had some left over coconut milk so I have been drizzling that on top. I haven’t tried it yet, but I’m sure mixing in almond or peanut butter would be AMAZING.
I’m also a huge fun of slicing a banana and topping it with PB2 mixed with chia seeds and then popping them in the freezer for 10 minutes. DELICIOUS and great pre-run meal too! PB2 is my answer to over indulging on peanut butter and not feeling quite as guilty. It’s basically powdered peanut butter you mix with water with 85% less fat then no peanut butter. I buy mine by the case on Amazon because it’s cheaper that way, but you can find it at Whole Foods and other speciality stores.
I’ve also been eating this easy and amazing grain free microwave muffin after my workouts! Even the hubs approves! Recipe coming SOON… I PROMISE.
