My lovely son has been bugging me to make him banana pudding after he spotted a picture of the recipe on the side of the box of some bad for you kind of Nilla wafers. I cringed when I seen the recipe that calls for all kinds of unhealthy ingredients. So what I did was make up my own version without the chemicals and with less of the sugar (it still tasted to sweet to me), but my son loved it, so I thought I would share with you since it is really a great tasty cold treat for this summer!
First thing I did was search for Organic no chemicals Vanilla wafers and these are what I found;
Organic Unbleached Wheat Flour, Organic Sugar, Organic High Oleic Sunflower and/or Safflower Oil, Organic Cane Syrup, Sea Salt, Organic Whole Eggs, Soy Lecithin, Organic Vanilla Extract, Baking Soda, Natural Flavors. these you can only buy on line and I wasn't really impressed, to many ingredients for my liking when you can also get;
back to Nature Madagascar Vanilla Wafers which I can't praise enough, because check out the ingredients: Whole Grain Wheat Flour, Cane Juice, Natural Vanilla Extract & Vanilla Beans! Wow now that's the way uh huh I like it...love it! And the best part is I was able to buy these right here at my local Whole foods market. Selection and availability may vary from store to store, so be sure to call first.
Now on with the show
1. I used 4 cups Organic Milk, (I suppose you could try other alternative milks which I will try in the future. If you have please share)!
2. 4 egg yolks (I used all natural vegetarian fed hens egglands best, only the best for my little guy)!
3. 1 cup of organic Sugar (there are several alternatives that I will try in the future such as, Stevia, or even Organic Agave Nectar. Again if you have used these, please share)!
4. 1/3 Cup Organic All-purpose Flour (I used Gold Medal, but I am sure their are several others that would work too)!
First whisk together first 4 ingredients in a large saucepan over medium-low heat. Cook, whisking constantly, 20 minutes or until thickened. Remove from heat; stir in butter and vanilla until butter melts. Let stand 10 minutes
Then arrange half of vanilla wafers evenly in a 13x9 inch baking dish; top with half of the banana slices and half of mixed berries. Spoon half of pudding mixture evenly over fruit. Repeat layers. Cover and chill for 4 hours.
Beat whipping cream at high speed with an electric mixer until foamy; gradually add powdered sugar, beating until soft peaks form. Spread evenly over chilled pudding. Serve immediately
WHIPPED CREAM Recipe;
1 cup organic heavy cream. I once again used Organic Valley
1-2 tablespoons powdered unrefined cane sugar (sold as "organic" powdered sugar)
a sprinkle of white stevia blend powder
1-2 tablespoons honey, agave nectar, maple syrup, or fruit spread
2 teaspoons vanilla or other flavoring extract
1 1/2 to 2 tablespoons sweet liqueur (optional)
Whip the cream until soft peaks form.
Stop beating and add the sweetener and flavoring.
Continue to beat until desired stiffness is achieved
