Hey everyone! I'm so sorry I haven't posted since Friday... and haven't gotten to read your blogs in FORVER! I miss you!!!
The reason I've been MIA for two days is that my flight back to Valdosta was delayed 36 hours. Yes, I got into V-town 36 hours after the anticipated time. I'm hungry, exhausted and a little on the grouchy side. So instead of turning this post into a vent-fest, here are some pics from the last 2 days of craziness:
Apple chips:

Chipotle vegetarian burrito bowl with no cheese or sour cream, lots of guac, lettuce instead of rice, fajita veggies, hot salsa and pico:

Vegan curry twigs: (I have about half of the bag left after my airport stay!)

Quite a few people have asked for the recipe --- it's so easy: peel and seed, crinkle cut, spray with Pam and season w sea salt and pepper, and bake on a nonstick sprayed cookie sheet 425 for 40 minutes, flipping halfway

This morning I had a double tall soy sugarfree cinnamon dolce latte with no foam and a side of finance reading:

For lunch, a coconut almond bar, while I tinkered with my computer and of course, the wireless wasn't working on my laptop. Lovely.

After I FINALLY got home, I unpacked my new goodies:
SNOWMAN dishes from my nana!! And the stocking I bought for Viesa

An LBD to wear in AJ's VEGAS WEDDING IN TWO WEEKS!

Goddess dressing, organic sake, raw almond butter:

All the food I brought home!

Popcorn, nutritional yeast, bars galore, chickpeas, butternut squash a la can, wafer cookies, dark chocolate, unsweetened coconut, brown rice protein, frutein, single serve hummus, and 4 Windsor Pilates DVDs (which I'm way stoked about!)
Is it obvious that we have NO healthy food in V-town?!? I have to stock up when I go to civilization :D
Well it's time to crash... I apologize (again) for my lack of blog reading and commenting. I plan to be back on track with my life by tomorrow!! I've missed you and and hope you had a wonderful weekend!
