Honey Roasted Root Vegetables (and lots of snow!)

We got somewhere between 18-24 inches of snow at my house yesterday. INSANE right? I could barely even find my car. Oh.. there it is..

This resulted in lots of sitting around the new fireplace and playing on the computer.

..without either of us saying anything outloud, haha! Can you tell we were going a bit stir-crazy yesterday? So, after drooling over Tina’s Honey Roasted Root-Veggies , I decided to alter it a bit and give it a try myself!

Ingredients:

  • 1 bag of parsnips
  • 1 bag of carrots
  • 1 turnip
  • 2 sweet potatoes
  • 1/2 cup honey
  • 4 tablespoons of olive oil
  • Pinch of salt

Directions:

  • Cut all veggies into small cubes and put into a brownie/casserole pan.
  • In a small bowl, mix together honey, olive oil, and salt and pour over veggies.
  • Bake at 450 for 40-45 minutes.

It came out so delicious!! I had never had turnips or parsnips before and I have to say I am a fan of both now!
