We got somewhere between 18-24 inches of snow at my house yesterday. INSANE right? I could barely even find my car. Oh.. there it is..

..without either of us saying anything outloud, haha! Can you tell we were going a bit stir-crazy yesterday? So, after drooling over Tina’s Honey Roasted Root-Veggies , I decided to alter it a bit and give it a try myself!
1 bag of parsnips
1 bag of carrots
2 sweet potatoes
1/2 cup honey
4 tablespoons of olive oil
Pinch of salt
Cut all veggies into small cubes and put into a brownie/casserole pan.
In a small bowl, mix together honey, olive oil, and salt and pour over veggies.
Bake at 450 for 40-45 minutes.
It came out so delicious!! I had never had turnips or parsnips before and I have to say I am a fan of both now!
