Happy Monday!

Today started out on a down note, I had been doing so well with my weight but I was actually up 1.5 lbs from Saturday's weigh-in. I know it's not the best plan to be weighing myself daily but I like tracking that along with my calorie intake. The gain could be the lack of activity on Sunday along with not eating the best on Saturday and Sunday. I was under my calorie limits but I had several beers which probably pushed me over. I did drink enough water on Saturday though, which is something I need to keep up during the week.

Tonight's run was awesome, I did the w3d1 workout for the Cool Running Couch-to-5k plan! I found it was actually easier to do the running parts than the walking parts and I did all of the run intervals at 5.5 mph. I also have increased my walking speed to 3.7 mph. I really wanted to run for longer and I was really proud of myself for not struggling with the run. Something I've always had a problem with is being out of breath, I was actually diagnosed with asthma as a child and with this program I don't find myself gasping for breath while running. I also don't get the deep gasping and chest rasps that I would get while running as a kid. I also did my weight training workout tonight so I just need to do it one more time this week. I might do it Wednesday night if I'm feeling crazy.

With my eating today I've been doing really well. For lunch I ended up walking with a co-worker for a few blocks and enjoying leftover pineapple black bean enchiladas. For dinner tonight Rod is making the eggplant roll-ups and a salad topped with blue cheese and pecans. I'm really excited with all the delicious options we have to eat this week. My biggest struggle is going to be Wednesday night when we have a Hoosier Beer Geek roundtable and I'm presented with many delicious beer options. I'm going to have to try to limit myself to small pours instead of going all out and splurging.

Tomorrow night will be a day off but we're going to Costco to pick up healthy breakfast options and goat cheese for the quesadillas. What are some of your favorite "diet" foods you can get at Costco?
