Chutney Chicken Wrap
2 tbsp chutney (The FBGs really like mango in this!)
¼ c low-fat mayonnaise
4 low-fat tortillas (8-inch in diameter)
4 large red lettuce leaves
2 c shredded cooked chicken breast or 8 oz sliced smoked turkey breast
1 c finely shredded carrots
1. Mix the chutney and mayonnaise in a small bowl. If you have time, cover and refrigerate for 20 minutes for the flavors to develop.
2. Spread a scant 1 ½ tablespoons of the chutney mixture on each tortilla. Top each with a lettuce leaf, ½ cup chicken or 2 ounces of turkey and ¼ cup carrots. Roll the wraps tightly and cut in half diagonally.
3. Nom nom them up!
This delicious and easy recipe (three steps, one of which is “nom nom them up?” We can do that!) serves four happily, and each serving has just 269 calories, 6 grams of fat, 23 grams of protein and 2 grams of protein. Thank you, Denise! —Jenn
