Bringing in Reinforcements

Posted Aug 19 2009 5:55pm
Time for 100% honesty folks, I've been on this healthy journey since January and I haven't lost hardly any weight!

Now it's not all gloom and doom, I've lost a lot in inches and my progress pictures show that I have slimmed down significantly since those lumpy, pudgy days in January. I haven't lost weight or dropped my BMI much in the process. The hubs and I discussed it today and on Monday when I have my annual checkup (hooray for my lady parts) I'm going to get a recommendation for a primary care physician to get bloodwork done. Maybe then we'll figure out why I've been following the healthy eating and exercise but haven't had the BMI results that I had been hoping for! Wish me luck, I'd really like to know why those numbers on the scale haven't been budging!

Now on to last night's dinner! I know that looks like a lot of cheese, but it was microplane grated (almost zested) on to our salads so we only had about two ounces of cheese for two bowls of salad! That might seem like a lot but it was just the perfect amount of flavor for the salad.

I paired it with a Founders Backwoods Bastard that I split with the hubs. "Backwoods Bastard" is a scotch ale that is aged in bourbon barrels which gives it notes of vanilla and oak. Yum!

The salad had romaine lettuce, fresh tomatoes, sundried tomatoes, kalamata olives, cucumbers and a dressing of our "good" olive oil and a 25-year aged balsalmic vinegar! It was so good, I think next time though we're going to try to dry the lettuce in the salad spinner so that the dressing sticks to the romaine leaves better. I'm off to work with my trainer at lunch today, it's time to get my butt kicked!

What are some of your favorite "easy" salad ingredients?
